Ingredients
1/3 cup cocoa powder
1 1/2 teaspoons instant coffee or expresso
1/2 cup plus 2 tablespoons boiling water
9 ounces semi-sweet chocolate chips
1/2 stick salted butter, melted
1/2 cup plus 2 tablespoons vegetable oil
2 large eggs
2 large egg yolks
2 teaspoons vanilla extract
2 1/4 cup sugar
1 3/4 cups all-purpose flour
3/4 teaspoon salt
Directions
1. Preheat your oven to 350 degrees.
2. Grease your baking pan with non-stick spray.
3. Bring water to a boil, then place in a large bowl (if you use a metal bowl, the mixture will stay hot longer, thus melting the chocolate chips quicker).
4. Add the cocoa powder and coffee or expresso.
5. Stir until dissolved.
6. Add the chocolate chips and stir vigorously until all are melted.
7. Add the vegetable oil and melted butter.
8. Stir and add the eggs, egg yolks, and vanilla.
9. Continue to stir until batter is smooth and everything is well combined.
10. Add the sugar 1 cup at a time and mix well.
11. Finally, add the flour and salt, mixing until thoroughly combined.
12. Transfer your mixture to your baking pan.
13. Bake for 30-40 minutes.
